2018 Cabernet Sauvignon, Alexander Valley

100% Cabernet Sauvignon from the Orsi Home Ranch in the Dry Creek Valley, hand picked and gently destemmed to small open top fermenters.  Punched down by hand until dryness, then racked to neutral French oak barrels to complete malolactic fermentation and aged for 2 1/2 years.  Racked by gravity, this wine displays classic aromas of cassis and chocolate coupled with cigar box and balanced tannins on the palate.    pH 3.69  TA  6.0 g/l
